ALFAJORES DE MAIZENA BOLIVIANOS

Finally I can bake, I loved this biscuit they are very popular in my city Santa Cruz Bolivia, I remember when I had this for first time I couldn't stop eating and for that I always got in trouble.

Alfajores son muy populares en Santa Cruz-Bolivia,creo que los espanoles los copiaron de los arabes llevandolos a Suramerica, la primers vez que los probe fueron en el snack que mi madre tenia, una senora los hacia para que nosotros los revendieramos, llevan dulce de leche y en algunos lugares son rellenados con majablano, clro que los argentinos los banan en chocolate

INGREDIENTS
200 gs butter
1 cup of sugar
3 yolks
1 teaspoon of rum
1 Teaspoon vanilla
lemon zest
11/2 cup of flour
2 teaspoon of baking powder
11/2 cornflour
caramel 
coconut to decorate
Preaparation:
Beat the butter with the sugar until cream and ligh add one by one the yolks continue beating add the rum, vanilla, lemon zest, sift the flour with the baking powder and the cornflour mix all together with a wooden spoon, leave to rest after 10 minutes roll the pastry and cut small disc cook in the oven for 10 to 15 minutes once cook add the caramel in the meddle of 2 disc past through grated coconut.Enjoy 

Tip the pastry is very soft use flour to avoid sticking in the hands.
